- Dedicated To Quality Libations and Cuisine
The scratch food, exceptional service and extensive offerings of beer, wine and spirits are better than they’ve ever been at The Blackbird Tavern + Kitchen. For the past three years, residents and visitors alike have had the privilege to dine and imbibe at The Blackbird on the restored first floor of the historic Broadview Dairy building, adjacent to the Spokane River, in Downtown Spokane. Opened by owners Patrick McPherson and Denise Hanson in the summer of 2015, this 4 Star Certified Green Restaurant has been attracting friends, family and travelers to gather for the fresh, locally minded food and fun. In 2018, The Blackbird has reinvented their atmosphere and cuisine to offer Spokane a truly traditional taste of the South. The new menu offers traditional southern smokehouse barbecue (including brisket, pork, jackfruit, hot links, spare ribs, chicken and more), and wood-fired smokers start smoking at midnight each. Serving up traditional Southern barbeque with a few twists, The Blackbird has the freshest wood-fired fare in Spokane. Their newly crafted cocktails are prepared to pair with the smoky plates, adding to their already comprehensive spread of beers (33 on tap), kombucha on tap, wines (four on tap) and spirits. Guests will enjoy the wood-fired Southern cuisine and libations in this casual, fun restaurant. The new restaurant concept has been a learning curve for both the Blackbird staff and their customers. “Spokane isn’t accustomed to barbecue like other parts of the country. Many people are also used to sauce-slathered meats at barbecue restaurants around here,” says Patrick. “Putting sauce on your meats allows you to hide inferior products such as poorly smoked, dry or meats from the previous day.” At The Blackbird, meats are made daily, and when they run out, they’re out. Patrick believes strongly that a barbecue joint should only make what they believe they can sell that day. The menu is smokin’ at The Blackbird, from their specialty sandwiches and tacos (choose from brisket, hot links, pulled jackfruit, pulled pork and chicken) to the brisket chili, filthy fries (pulled pork, smoked cheddar, cheese sauce and roasted garlic), smoked and fried wings and corn dogs (house-battered chorizo sausage, smoked paprika ketchup and honey). Patrick, who is a certified cicerone and publican, is in charge of the cellar as well as writing the beer menus at The Blackbird. Beers are cellared on site as well as an off-site temperature-controlled cellar. “Our knowledgeable staff and our beer selection certainly sets The Blackbird apart. We require all of our servers and bartenders to be Cicerone ®Certified Beer Servers,” says Patrick. The Blackbird is also proud of their cocktail program. “We make a bunch of in-house infusions, which allows us to make our own unique cocktails such as our mezcal old fashioned,” says Patrick. They also serve many classic cocktails that pair well with barbecue such as their mint julep. “We're most proud of the fact that we try to not cut corners, whether it's with food or beer. Integrity is paramount to everything we do.” What are you waiting for? Head to The Blackbird Tavern + Kitchen for the best food—and drinks—in town. - Serving Spokane the Best for More Than Four Decades
Over the past four decades, Spokane has welcomed, and said its goodbyes, to dozens, if not hundreds, of restaurants. But during that time, there has been one locally owned, longstanding restaurant group that has stood the test of time—Spokane’s Landmark Restaurant Group. The company behind the Onion Taphouse and Grills and Frank’s Diners has been catering to locals and visitors alike since 1978, and they’re stronger and more successful than ever. Founded by Larry Brown, the downtown Onion Tavern made its debut in 1975. Three years later, Larry got a large loan from US Bank and did a beautiful remodel of the space. “That is when the official Onion Bar & Grill everyone knows today was born,” says Ken Belisle, president and managing partner of Landmark Restaurants. In 2018, The Onion Taphouse & Grill’s 40th anniversary in business was marked, but the original 1975 Onion menu still hangs in the restaurant today as a reminder of its humble tavern roots. With the success of The Onion downtown, it was time to add to their restaurant family. Built in 1982, The North Side’s Onion Taphouse and Grill has been a north side hangout for large parties and family gatherings for 36 years. In 2015, the new Area 51 Taphouse in the lounge became an instant north side favorite. Less than a decade later, it was time for a new venture! In 1991, Downtown Spokane was treated to its third Landmark Restaurant—Frank’s Diner. “A lost ground lease in Seattle was Spokane’s gain, and Frank’s Diner railcar was introduced to Downtown Spokane in the fall of 1991,” says Ken. “This original, beautiful 1906 railcar in which Franks’ Diner is housed was actually the private railcar for the president and is as beautiful today as when it was first built.” In January 2004, a second Franks Diner began its restoration journey. “We finally found a transport route to bring our dilapidated 1916, 100-ton, 83-foot railcar over from the coast,” says Ken. “It then spent the next year in a hanger off Argonne as we began the slow, painful restoration process. In 2005, after $1 million and thousands of man hours, she was finally ready to make her debut and move to her new home in North Spokane. With the help of two huge 100-ton cranes and a massive semi haul with police escort, our beautifully restored 1916 presidential railcar was moved to its final home, and the second Frank’s Diner opened in the summer 2005 on Newport Highway.” Forty years and four successful restaurants certainly seems like they have created a recipe to success. “We recognize the enormous obligation to keep finding ways to exceed our guests’ expectations,” says Ken. “We know that to exceed our guests’ expectations means we must exceed our crews’ expectations first. My No. 1 goal is to be Spokane’s employer of choice. Only then can we truly wow our guests.” He adds, “Our guests’ desire for locally sourced scratch-made food and craft beverage, prepared fresh when they order by people who love what they are doing, is our passion. We won’t rest until we’ve exceeded our crewmembers’ and every guest’s expectation.” Ken and his team know time is valuable, so when their guests can join them for a meal, they are dedicated to creating an experience that is truly wonderful for each and every guest—every time. Serving Spokane the best for more than 40 years, take a seat at The Onion or Frank’s Diner, where Ken and his crew bring passion and experience to the table. - Recipe for Success
You can’t help but notice all of the gastropubs and public houses that have been popping up all around North Idaho the past few years, yet, there is one that started it all back in 1996 right here in Coeur d’Alene, Idaho. And it has stood the test of time. Any local will tell you Moon Time is a very casual, comfortable place to hang out. It’s like its own community. There are customers who have been going there for more than 20 years who are still seeing the same staff who has been working there nearly or just as long. Friends and owners John Grollmus and Brad Fosseen have seen to it, since day one, that Moon Time gives their guests consistency. Offering great food at a reasonable price, paired with excellent service and a familiar face, has always been their goal. Guests get what they have come to expect. The menu, from the start, has featured unique and upscale pub food bringing a variety of items from many different cultures together, paired with a carefully selected 19 beer handles and a wide variety of wines, which complement the food. John and Brad care about the success of their restaurants, but even more importantly, they care about their employees. They are not blind to the realities of life, and it is important to them to take care of those who work for them. That is just one reason they try to pay better than any other restaurant in the area. “I think it’s important that both Brad and myself spent our whole lives working in restaurants. That experience helps us to make the kinds of decisions which employees appreciate as they come from a perspective which understands the employee,” says John. When in Coeur d’Alene and looking for a great neighborhood pub, pull up a chair at Moon Time, where the staff is ready to serve you the best! Moon Time East Coeur d’Alene 1602 E. - Loyal Customers Keeps Restaurant Going Strong
Located just west of Downtown Spokane in the heart of the historic Browne’s Addition neighborhood is where you will find one of the area’s true treasures—The Elk Public House. Consistently good food and atmosphere along with friendly service and menu items offered at a reasonable price—these are what appeal to everybody, no matter one’s age or financial status. And whether it’s your first date or 50th anniversary, The Elk will treat you to an experience that won’t soon be forgotten. This is what The Elk Public House has delivered year after year to their guests since opening its doors in 1999. Take a seat in the comfortable and inviting welcome-to-my-house environment, which is laid back, not pretentious. Here you will be treated like family, whether you’re an out-of-town guest dining in for the first time or one of their loyal customers of nearly two decades. Owned by John Grollmus and Brad Fosseen, their employees most certainly care about the restaurant and their guests as is reflected by the many longtime staff members it employs. From ownership down through management and staff, when you walk into The Elk, it feels like family. And they treat their guests as such. Now let’s talk food. In addition to the traditional Reuben, thanks to the Food Network’s Diners, Drive-Ins and Dives show, which featured the Elk back in 2010, the Santa Fe chicken sandwich, Mediterranean grilled lamb sandwich and legendary roasted corn pasta are favorites. They also offer creative weekly specials and homemade soups, inventive cocktails and great brews. John and Brad are also the duo behind Two Seven Public House, El Que and Geno’s Traditional Food and Ales in Spokane, Moon Time in Coeur d’Alene and The Porch Public House in Hayden. Their common philosophy at each location is to make food from scratch, price it affordably and serve it with a smile. Every neighborhood should be so lucky. - Great New Taste
Nowhere else in the region—and rare in the U.S.—is there a facility that so artfully exposes the inner workings of an industrial plant while providing an experience that is truly unmatched in its vitality and energy. Spokane’s Steam Plant is both historic and contemporary; a visual icon that typically results in a one-word reaction from visitors: “Wow.” Using materials that provide warmth to the expansive four-story space, the interiors are the perfect blend of industrial and contemporary. The main-level restaurant, Steam Plant Kitchen + Brewery, is an open design overlooking the bar area and features comfortable, tufted seating in the built-in booths next to steel-cladded walls. The bar offers a mixture of large community tables as well as both semi-private and private booth seating. For visual interest, large murals showcase the plant’s historic roots, while patterns of steam pipe lines snake through the ceiling, providing a creative way to hang lighting that washes beams and columns. The plant’s boilers are brought into the forefront with a fresh coat of paint and a splash of color. Diners can now enjoy the spacious atmosphere in the light of day, as lunch service is back. And the addition of the Rooftop Event Space is available for a wide range of events from Beer & Yoga Nights to wedding receptions to corporate retreats. The space can accommodate up to 150 people, includes a ready room and a patio, and offers a unique view of the plant’s smokestacks and the Spokane skyline. “What I’m most excited about,” says Jeff Cooney, Steam Plant general manager, “is not only the amazing space this renovation has created but also the energy of our staff. They come to work every day ready to deliver hospitality in a way Spokane hasn’t seen before. They’re genuinely committed to earning that ‘Wow’ reaction from every one of our guests.” Jeff has more than 20 years of experience in the hospitality industry. After graduating from culinary school in Scottsdale, Arizona, Jeff moved to Spokane and has been managing restaurants throughout the Northwest for the last 10 years. The enlarged kitchen includes a wood-fired pizza oven, rotisserie, char-broiler and smoker. The menu focuses on handcrafted, authentic foods. Specialties include a “wood-kissed Caesar” with grilled romaine, a rotisserie chicken and a turkey sandwich that is claimed to be “World's Best,” along with generous-pour signature cocktails and a regional wine list. “There’s something special happening here at the Steam Plant,” says Executive Chef Paul Taylor. “During my almost 30 years in the industry, I’ve been a part of some truly great kitchens, but nothing is quite as unique as this space.” Paul, who trained at Northwest Culinary Institute, has worked at several restaurants in Oregon and Washington, including Hall Street Grill in the Portland area and with Bon Appetit and their “farm to fork” program at Evergreen State College. Meanwhile, Head Brewer Ben Quick continues to create craft brews on site, offering a variety of permanent taps and inventive seasonals created by beer lovers for beer lovers! The Steam Plant is constantly finding new ways to use these delicious brews in the kitchen’s recipes for a twist on traditional favorites. New space, new menu items and a rotating selection of handcrafted brews: The Steam Plant’s transformation will definitely keep you coming back for more. - Vine & Olive Eatery and Wine Bar
This past November, Coeur d’Alene’s Riverstone became home to a new dining experience—Vine & Olive Eatery and Wine Bar. The woman behind the concept is Naomi Boutz, who has been a staple in the area’s wine and food scene for more than a decade. At Vine & Olive, she brings her experience and passion for food and wine, to the table for all to enjoy. After working for incredible people over the years—including Jim Duncan and Adam Hegsted—Naomi knew it was time to pursue her dream of opening her own place. “I started jotting down ideas in 2015; everything from décor, to menu ideas, silly names for wine flights or categories, guiding principles for the handbook, you name it. Two notebooks were full by the time I actually opened.” As you walk through the doors of Vine & Olive, you’ll discover a perfect balance of industrial and chic with barn wood on the walls, warm lighting and a floor-to-ceiling black and white world map mural in the pub. The restaurant seats 94 indoors, and during the summer months, six outdoor tables allow patrons to dine outside. The seasonally rotating menu—inspired by Naomi’s travels through Italy and France and the simplicity of their dishes—features many European influences made with Northwest flair. The chef behind the enticing cuisine is Paul Mason, a Chicago transplant with a degree in philosophy who holds an impressive resume that includes working in restaurants such as Girl and the Goat, Next and Boeufhaus. Vine & Olive embraces the small-plate concept but offers regular sized entrées as well. Acorn squash frites served with spicy aioli has already become the most popular menu item, according to Naomi, and customers are coming in specifically for the escargot, done in a classic French style of garlic butter and herbs served with baguette. They also offer a dynamic and thoughtful wine program that’s committed to showcasing Northwest producers and interesting imports. As Naomi says, “Our food is created with the idea that it will be paired with the wine we offer.” Naomi’s goal is for every person who steps foot into Vine & Olive to feel welcome and to experience simple yet thoughtful food with soulful service. She commends her team for the amount of ownership they have taken, keeping the energy high and the guest experience consistent. And the community has already embraced Naomi and her staff. “This community’s support has exceeded my highest expectations. I couldn’t be more grateful for the locals in North Idaho and Eastern Washington,” says Naomi. “We were named North Idaho Business Journal’s Best New Business. Every day somebody new thanks me for opening something like this in Coeur d’Alene. It’s both humbling and overwhelming.” Guests are invited to dine and imbibe at the eatery and wine bar daily for lunch and dinner starting at 11:30am. - Adventure
When Zach and Hannah Vollmer were presented with the opportunity to purchase the Alpine Shop in Sandpoint, they knew they could not pass it up. For the previous two years, Zach had worked as general manager for both Alpine Shop locations, one in Downtown Sandpoint and the other in Schweitzer Village, and already knew the business thoroughly. And besides, working side by side was something the couple had long talked about. “We have always wanted to work together and own our own business,” says Hannah. “Owning and operating the Alpine Shop not only allows us to do this but also utilizes our strengths. Above all it allows us to be a part of the Sandpoint community, which we love.” The Alpine Shop has been a staple in Sandpoint for more than 50 years. As new owners, both Zach and Hannah are grateful to previous owners for building such a great foundation upon which they can continue to expand to serve locals and tourists alike. Since purchasing the business at the beginning of summer, Zach and Hannah already have regular customers from Sandpoint and beyond who they now call friends. With a mission to provide superior customer service, Zach and Hannah look forward to doing all they can to maximize their customers’ experience when it comes to both shopping and embarking on adventure. The couple has more than 20 years combined experience as sales reps, buyers and managers for various outdoor industry companies and also have a passion for outdoor adventure themselves. “Our professional experience and participation in outdoor recreation makes us a great resource for our customers,” says Zach. When you walk into both of the Alpine Shop locations, you will experience a welcoming atmosphere with staff that is eager to assist you with whatever you need. They provide boot fitting and ski tuning at both locations, so you can be ready for your day on the mountain. If you are looking to rent, they offer rental packages on skis, snowboards, cross-country skis and snow shoes. “We offer everything from basic to high-performance equipment for rent and for purchase,” says Zach of the products they carry, which include brands such as Salomon, Atomic, Nordica, Blizzard, Volkl and Rossignol. And with so many brands from which to choose, the Alpine Shop at Schweitzer provides a unique opportunity for customers to demo skis before purchasing them. “It provides our customers a chance to have the experience of trying them out before making the decision to purchase,” Zach says. At both locations, there is also much to choose from when it comes to clothing, jackets, ski gloves and more. Among the name brands they carry are Arc’teryx, Flylow, Hestra, Picture, Helly Hansen, Smartwool, Descente and Spyder. And if you think the Alpine Shop is all about winter adventure, think again! - Continuing the Tradition of Great Service
It’s been five years since Geno’s changed ownership and ended up in the hands of local friends and business partners John Grollmus and Brad Fosseen. The two are the ones behind several area favorite restaurants including The Elk, El Que and Two Seven in Spokane, and Moon Time and The Porch in North Idaho. With the success its sister restaurants have seen over the years, Geno’s Traditional Food and Ales has established itself as another neighborhood gem the community has embraced. Geno’s celebrated its five-year anniversary this past October, and it’s no surprise that it continues to be a local favorite as it carries on John and Brad’s long tradition of good food and friendly service where guests are welcomed by a casual feels-like-home atmosphere. The menu includes some of the same favorites known in their other pubs, like The Elk’s famous Reuben sandwich (guests have the choice of a gluten-free bun for all sandwiches) and Moon Time’s 74th St. gumbo, but the menu is adorned with items that are unique to Geno's, such as the Cuban pork sandwich and Geno's chicken wings with your choice of three sauces. For a twist on this menu, Geno’s has french fries—which none of the other restaurant locations have—in addition to the ever-popular, and addicting, roasted corn pasta. The food is complemented by a great tap selection and cocktails. Staying in tradition with the other pubs, Geno’s menu appeals to the masses not only in taste but in price. No one leaves Geno’s hungry—or broke. And It’s a perfect place to unwind and support the Gonzaga Bulldogs, with plenty of TVs to watch the games. The kitchen stays open late, so it’s a great spot to meet up after the game, or for that matter, any event taking place at the Spokane Arena, thanks to its close proximity. Great brews and cocktails, and of course, the tasty food and good company makes this a destination you will want to return again and again. Geno’s Traditional Food and Ales Downtown Spokane 1414 N. It was 11 years ago that Dry Fly Distilling introduced itself to Spokane and not before long, the world. And the inspiration began with a fishing trip. While Don Poffenroth was entertaining clients on the Gallatin River in Montana, the group drinking high-end vodka, he began to contemplate whether the glass in hand was truly the best vodka the world had to offer. His response: No. It was at that moment that the inspiration behind Dry Fly Distilling was born. “The name Dry Fly not only recalled the original inspiration but also captured the beauty of the Northwest and the qualities that fly fishing requires—patience, persistence, presentation and perfection; the same qualities required to produce and market fine spirits,” says co-owner Terry Nichols. At that time, there was no craft distillers license in Washington state, so Don, with local senator Chris Marr, drafted a piece of legislation that would allow for the creation of a craft distillers license, as long as the producer used a high percentage of Washington-grown ingredients in the manufacturing process. Today, owners Don, Terry, Ralph Quinsey and Patrick Donovan continue to utilize 99 percent Washington-grown ingredients—from family owned farms within approximately 30 miles of the distillery—for their products. Dry Fly was the first distillery in Washington state and among the first 25 in the country! At its inception, Dry Fly Distilling produced two products—their superb high-quality vodka (of course!) and gin. More than a decade later, the distillery produces a wide range of spirits, vodka, gin and a line of whiskies that are amongst the best in the world and distributed throughout the world. At the 2018 Whiskies of the World event, Dry Fly Distilling was a three-time gold recipient and a silver recipient. “We are currently in the planning stages for an expansion of our capacity to support growth in both our domestic and international markets,” says Terry. “We see a continual increase in whiskey quality as our barrel inventories gracefully age in the warehouse—6-year-old wheat whiskey tasted from the barrel is nothing short of epic! We would ultimately like to be recognized as one of the highest quality whiskey producers in the world.” Thanks to the addition of the Dry Fly Tasting Room in 2017, the visitor experience has been greatly enhanced. Serving some of the finest craft cocktails in the region and offering retail bottle sales, the Tasting Room’s inviting space is also ideal for meetings and parties. If you are looking for a location to host your private event, the Tasting Room is available for nonprofit functions, company meetings, birthday parties, bridal and baby showers, anniversary celebrations and more. When it comes to what Don, Terry, Ralph and Patrick are most proud of when it comes to Dry Fly, it is the high-quality products they continue to produce all while supporting local farmers and connecting with their employees, community, customers and fans, and the nonprofit community. Terry credits the above, in addition to the foresight of founder Don and their distributers and retail partners, for Dry Fly’s continued success over the years. Patience, persistence, presentation and perfection. With the uncompromising commitment to quality and values, taste and discover excellence embodied in each bottle.
