- Steam Plant To Roll Out New Dinner-Driven Menu
SPOKANE, Washington (March 6, 2019) – A recreated menu. A renewed emphasis on food and service. A more customer-centric approach. That’s all good news for Steam Plant Kitchen + Brewery patrons. But it means that, beginning Monday, March 18, the restaurant, which re-opened last year after a six-month renovation, will no longer be offering lunch – focusing instead on a new dinner-driven menu. “When it comes right down to it,” explains Steam Plant sales director Kelli Campbell, “we’re a dinner destination. We’re the place you go to impress a first date, or to take your out-of-town relatives for a magical evening.” So it makes sense, she says, to play to their strengths, like offering truly inventive, locally sourced cuisine and hand-crafted brews seven days a week from 3 p.m. to close. According to general manager Jeff Cooney, there are also practical reasons for the shift in focus, centered mostly around a menu that specializes in painstakingly prepared food. “Smoking a beef brisket, slow-cooking a chicken on the rotisserie…it all takes time and care and patience,” he says. But, he’s quick to add, that attention to detail – along with the restaurant’s location in the heart of Spokane’s entertainment and arts district – is why dinner service has been such a success over the last year. The Steam Plant will continue to offer breakfast, lunch, and dinner for private parties and corporate meetings in its five event spaces, which range in size from a 16-person private dining room (that was once an actual boiler) to an open-air rooftop event space for 150. The Kitchen + Brewery offers happy hour seven days a week from 3 to 6 p.m., live music every Thursday at 5 p.m., and valet parking Wednesday through Saturday starting at 5 p.m. Supplying steam heat to more than 300 downtown businesses at its peak, the Steam Plant, designed by renowned Spokane architect Kirtland Cutter and built in 1916, operated for nearly 70 years before it was ultimately shuttered. A 1996 renovation by owner Avista Development and developer Wells & Company converted the industrial building into a mixed-use facility; the most recent transformation, completed in 2017, offers destination dining, premiere events, and both office and retail space. A girl, a small Idaho town and potato vodka. That’s how the story begins. Fast forward to today, and Party Animal Vodka is taking Idaho by storm, one bottle at a time. Katherine Cullen is the woman behind Party Animal Vodka. Founded in 2017 and officially bottled in 2018, Katherine, along with fiancé and co-founder Joshua Hanson, launched the company right here in Idaho in April 2018 when bottles officially began hitting shelves. “I really wanted to drink a brand of vodka that had a story behind it that I could not only relate to but also stood for a just cause,” recalls Katherine. “I wanted a brand that related to me no matter if I was planning on staying in and having friends over or out at the bar taking shooters with all the other ‘party animals.’ Then it clicked. I began a quest to create a vodka that contained three simple factors: quality, philanthropy and a brand that relates to a live-in-the-moment lifestyle.” Today, more than ever, consumers care about the products they use and consume. Party Animal Vodka provides an extremely high-quality product at a reasonable price. “Our product also uses its name to relate to the consumer, as well as symbolize the philanthropy,” says Katherine. “The Party Animal brand name and culture is synonymous with giving back to animals.” Traditionally, vodka was made from potatoes, but today, most are made from corn, grain or wheat. Party Animal Vodka is distilled in Idaho from locally sourced famous Idaho russet potatoes. “We like to say we are ‘getting back to the roots,’” smiles Katherine. There are no added sugars, preservatives or flavors in their product, and it is, low calorie and low carbohydrates. She adds, “Our vodka is distilled once; done right the first time.” By sourcing and producing their product in Idaho, Party Animal Vodka is supporting the local economy, from the local potato farmer to creating jobs at the distillery and in the sales force. “Idaho potatoes and our Idaho distillery are what make our vodka so great, so why outsource?” says Katherine. “Keeping it local keeps the quality high and the revenue and jobs local. And last but not least, a portion of every bottle sold in Idaho gives back to Idaho wildlife conservation and local animal shelters.” In addition, the distillery is eco-friendly and utilizes wind power. They also recycle waste water and use their by-product for livestock feed. If you haven’t seen the results of the Steam Plant’s major renovation yet, well … why not? Nowhere else in the region—and rare in the U.S.—is there a facility that so artfully exposes the inner workings of an industrial plant while providing an experience that is truly unmatched in its vitality and energy. Spokane’s Steam Plant is both historic and contemporary; a visual icon that typically results in a one-word reaction from visitors: “Wow.” Using materials that provide warmth to the expansive four-story space, the interiors are the perfect blend of industrial and contemporary. The main-level restaurant, now called Steam Plant Kitchen + Brewery, is an open design overlooking the new bar area and features comfortable, tufted seating in the built-in booths next to steel-cladded walls. The bar offers a mixture of large community tables as well as both semi-private and private booth seating. For visual interest, large murals showcase the plant’s historic roots, while patterns of steam pipe lines snake through the ceiling, providing a creative way to hang lighting that washes beams and columns. The plant’s boilers are brought into the forefront with a fresh coat of paint and a splash of color. Lunch service is back, meaning diners can now enjoy the spacious atmosphere in the light of day. They’re genuinely committed to earning that ‘Wow’ reaction from every one of our guests.” John, who joined the Steam Plant team in July, has more than 25 years of experience in the hospitality industry, primarily in the Chicago and Seattle markets. He’s operated restaurants in the Spokane area for the last 10 years. Bold Flavors, Regional Favorites The enlarged kitchen includes a wood-fired pizza oven, rotisserie, char-broiler and smoker. The menu has been completely recreated with a focus on handcrafted, authentic foods. Specialties include house-smoked salmon carbonara, a rotisserie porchetta sandwich and a “wood-kissed Caesar” with grilled romaine, along with generous-pour signature cocktails and a regional wine list. “There’s something special happening here at the Steam Plant,” says Executive Chef Paul Taylor. “During my almost 30 years in the industry, I’ve been a part of some truly great kitchens, but nothing is quite as unique as this space.” Paul, who trained at Northwest Culinary Institute, has worked at several restaurants in Oregon and Washington, including Hall Street Grill in the Portland area and with Bon Appetit and their “farm to fork” program at Evergreen State College. Meanwhile, the brewery continues to create craft brews on site. In addition to a variety of permanent taps and inventive seasonals, they offer barrel-aged limited release brews and are finding new ways to use their creations in the kitchen’s recipes for a twist on traditional favorites.
