  • Scale House Market: Spokane’s First Year-Round Farmers’ Market

    Bringing local food, artisans, and community together By Taylor Shillam Coming soon and located in the heart of Spokane County, the Scale House Market sets out to offer “one building for our community,” an innovative agricultural hub and home to the area’s first year-round farmers’ market.  “The Spokane Conservation District has partnered with female- and veteran-owned business, Four Roots, to form The Scale House Market, Spokane’s first year-round, permanent farmers’ market,” says Vicki Carter, director at Spokane Conservation District.  Set to open this spring, the Scale House Market market is expected to draw nearly 250,000 people a year. Designed to host indoor-outdoor vendors, the facility will be equipped with a commercial kitchen, food truck incubator, and more. It will host classes and events and operate all year long, instead of the traditional spring-to-fall farmers market model, Vicki shares.  Located less than five minutes from the freeway at 4422 E. 8th Avenue, “the new site will feature a blend of seasonal open-air markets, an indoor mercantile year-round and community events,” Vicki says. “Community members can take classes on cooking, food preservation, and how to avoid food waste. Vendors will offer related products such as seeds and flowers.”  Vicki says the market will offer shelf-stable items and dry goods available year-round, such as beans and herbs, spices, pasta, and breads. “We will also feature a local creamery, local meat products, and of course fresh produce!”  With Scale House Market offering an indoor marketplace setting and access to ample onsite services, vendors will be able to showcase their products throughout the year. The facility will be home to a commercial kitchen, along with refrigerator and freezer space that will allow producers to hold longer seasons.  The fully-equipped commercial learning kitchen will be available to vendors and available to rent for food preparation, cooking and packaging, and more. The Scale House Market suggests vendors can use the commercial kitchen to prepare food to be sold at the market, host educational classes, lead demonstrations, or test new recipes, providing ample opportunity for market guests to learn, sample, and share culinary and nutritional experiences as a community.  “There will be a lot of nutrition education classes, demonstrations,  and classes related to food production, preparation, and preservation – really bringing back some skills that have been lost, and increasing people’s ability to use the nutritious food they find at the market,” Vicki says.  Fueled by a mission to foster a more vibrant local food system, provide a valuable local resource for the community, and provide a strong platform for highlighting local businesses and farmers, the innovative concept behind the Scale House Market is set to make a profound impact on the way the community connects, learns together, supports local entrepreneurs, and savors local food.  After receiving public and private funds, its capital campaign is within $1 million of its goal.   • Spring Vegetable Quiche

    Servings: 6–8 slices (serves 6 as a main dish or 8 as a side) Prep Time: 30–40 minutes (including crust preparation) Cook Time: 50–55 minutes (10–15 minutes for blind baking the crust + 35–40 minutes for the quiche) Total Time: 1 hour 20 minutes–1 hour 35 minutes Ingredients For the Crust 1 1/4 cups all-purpose flour 1/2 teaspoon salt 8 tablespoons cold unsalted butter, cubed 3–4 tablespoons ice water For the Filling 1 tablespoon olive oil 1/2 cup asparagus, trimmed and chopped into 1-inch pieces 1/2 cup baby spinach, roughly chopped 1/2 cup cherry tomatoes, halved 1/4 cup green onions, thinly sliced 1/4 cup fresh parsley, chopped 4 large eggs 1 cup heavy cream 1/2 cup whole milk 1/2 teaspoon salt 1/4 teaspoon black pepper 1/4 teaspoon nutmeg 3/4 cup shredded Gruyère or cheddar cheese 1/4 cup grated Parmesan cheese Method Step 1: Make the Crust Combine Ingredients: In a food processor or mixing bowl, combine the flour and salt. Add the cold butter and pulse or mix with a pastry cutter until the mixture resembles coarse crumbs. Add Water: Gradually add the ice water, 1 tablespoon at a time, mixing until the dough comes together but isn’t sticky. Chill: Form the dough into a disk, wrap it in plastic, and refrigerate for at least 30 minutes. Step 2: Prepare the Filling Preheat Oven: Preheat your oven to 375°F (190°C). Sauté Vegetables: Heat olive oil in a skillet over medium heat. Add asparagus and sauté for 3 minutes until tender-crisp. Stir in spinach until just wilted. Remove from heat and set aside. Step 3: Assemble the Quiche Roll Out the Dough: Roll out the chilled dough on a floured surface into a 12-inch circle. Fit it into a 9-inch pie pan or tart pan, trimming the excess edges. Prick the bottom with a fork. Blind Bake: Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 10 minutes, remove the weights, and bake for another 5 minutes until lightly golden. Step 4: Prepare the Egg Mixture Whisk Eggs and Cream: In a mixing bowl, whisk together eggs, heavy cream, milk, salt, pepper, and nutmeg. Layer Ingredients: Sprinkle Gruyère cheese evenly over the crust. Layer the sautéed vegetables, cherry tomatoes, green onions, and parsley. Pour the egg mixture over the vegetables, ensuring it’s evenly distributed. Top with Parmesan cheese. Step 5: Bake the Quiche Bake: Place the quiche in the oven and bake for 35–40 minutes, or until the center is just set and the top is lightly golden. Cool: Let the quiche cool for 10 minutes before slicing. Enoy! Serve warm or at room temperature for breakfast, brunch, or a light dinner. Pair with a fresh spring salad for a complete meal!

Mobius Discovery Center asks. Located in downtown Spokane near City Hall and Riverfront Park, Mobius offers endless opportunities for kids and families to explore, learn and play.  A blend of play-based exhibits from its former children's museum, and inquiry-based exhibits from its former science center, Mobius sparks curiosity and ignites the imagination of all ages through exploration and play, hands-on exhibits, and STEAM learning experiences. "Mobius provides a unique continuum of experiential learning that cultivates critical thinking and problem-solving abilities — foundational skills that create lifelong learners," says Karen Hudson, CEO of Mobius Discovery Center. "Mobius brings STEAM education to the Inland Northwest, as a community hub, a web of outreach programs, a resource for educators, and a nonprofit organization that survives on support from the community. Mobius is for the whole family!"  "Schools, nonprofit organizations, community centers, and students are impacted every year with educational opportunities through on-site and outreach programs," Karen says. "'STEAM at Mobius' includes field trips, educational workshops, and visitor programming, and 'Mobius on the Move' provides outreach education to the Inland Northwest with STEAM events, hands-on workshops, and a mobile planetarium."  Mobius also offers birthday parties, classes, STEAM Kits, venue rental, and after-hours adult-only events.   This February at Mobius, look for highlighted events like the WSU Health + Wellness Series, as Mobius partners with Washington State University's College of Pharmacy and Pharmaceutical Sciences to present engaging educational activities centered on health and wellness led by student pharmacists. Learning topics include the Five Senses, Vitals & Hand Hygiene, and Heart and Blood. Mobius will celebrate Valentine's Day early on February 13 with its Lovebugs class, part of the Little Learners series for ages two and up. February's theme, "Love is in the Air!" invites kids and parents to create Valentine's Day-themed crafts in a fun 35-45-minute class perfect for young learners.   Mobius will also host its Blood Drive on Saturday, February 15, inviting the community to "Save lives, donate blood, and help raise funds for Mobius!" Mobius aims to collect 60 units of blood through the drive, which will earn them a STEM Grant provided by the Blood Center Foundation of the Inland Northwest. On February 15, each donor from 9 am to 2:30 pm will be eligible to receive two free daily admission passes to Mobius for use on a future visit.  Beyond February, look for more exciting events on Mobius' calendar, including the Homeschool Explorations class series for ages five and up, with topics like Planetarium, Geology 101 and Art 101.  Ready to explore Mobius Discovery Center?
