Chocolate Lava Skillets with Mixed Berries

Rich, molten-centered chocolate baked in individual skillets and finished with fresh mixed berries for balance and contrast.

Ingredients

• 6 tablespoons unsalted butter, plus more for greasing

• 6 ounces dark chocolate (60–70%), chopped

• 2 large eggs

• 2 large egg yolks

• 1/4 cup granulated sugar

• 1 teaspoon vanilla extract

• 1/4 teaspoon salt

• 2 tablespoons all-purpose flour

• 1 cup mixed berries (blackberries, raspberries, pomegranate arils, or sliced strawberries)

• Optional: powdered sugar or vanilla ice cream for serving


Instructions

  1. Preheat the oven to 425°F. Butter four small oven-safe skillets or ramekins and set them on a baking sheet.

  2. Melt the butter and chocolate together in a heatproof bowl set over gently simmering water, stirring until smooth. Remove from heat and let cool slightly.

  3. In a separate bowl, whisk together the eggs, egg yolks, sugar, vanilla, and salt until pale and slightly thickened.

  4. Whisk the melted chocolate mixture into the eggs slowly. Fold in the flour just until combined.

  5. Divide the batter evenly among the skillets. Bake for 10–12 minutes, until the edges are set, but the centers are still soft.

  6. Remove from the oven and rest for 2 minutes. Spoon berries over the top and serve immediately, with powdered sugar or ice cream if desired.


Notes

• For a deeper chocolate flavor, add a pinch of espresso powder to the batter.

• Serve straight from the skillet for the best lava effect.
